Mini Pumpkin Maple Tiramisu


A take on a classic dessert to bring something new to the traditions of Thanksgiving. Mini Pumpkin Maple Tiramisu is a delicious and easy way to achieve just that. 


The recipe for Mini Pumpkin Tiramisu has been sitting in my collection of recipes for over a year now. When I was discussing what to bring to Thanksgiving lunch this year with my dear Auntie M, I told her I wanted to do something different. So, over coffee we discussed options and I thumbed through the recipes I had in my Dropbox (a great "cloud" storage app, look it up). I came across the tiramisu and I was sold right away. I looked no further, but I knew that I wanted to change one thing right away. 

While I love a nice Pumpkin Spice Latte, that painfully seasonal drink at local and national coffee shops, I just didn't think I wanted this dessert to have the coffee. That said, I love coffee and I love a traditional tiramisu, but this needed to be different. So, I instantly thought about maple. I've been hooked on maple lately. When I say maple I don't mean Aunt Jemima, I mean REAL maple. Since I tried the real deal a few months ago, I haven't stopped thinking about including it in numerous dishes I've made. Just a few weeks ago I made a Maple BBQ for a Bacon Hamburger. Delicious, it was. Real maple syrup does have a higher price but I guarantee you will enjoy every drop of that syrup far more than something artificially flavored. Trust me. 

With my recent obsession, I decided to brush the lady fingers in maple syrup. I was concerned that the flavor wouldn't carry through, but I was wrong. It also helped that I added maple syrup to the whipped cream. I told you, I'm addicted to this stuff! 



These Mini Pumpkin Maple Tiramisu desserts complete into a beautiful picture perfect treat. Within each swoop of your spoon there is a fabulous fusion of every delicious layer. Each bite lends a nice hint of pumpkin spice balanced with a light sweetness from the maple syrup. The fluff of the whipped cream compliments elegantly alongside the soft maple kissed lady fingers.

Without further ado here is the recipe...



Mini Pumpkin Maple Tiramisu

Makes: 18 - 5 oz desserts

Ingredients:

18 5 oz parfait cups (I used 5 oz wine glasses from GFS)
18 Lady Fingers
1/4 cup Real Maple Syrup

Filling:
16 oz Cream Cheese, softened
1/2 cup Sour Cream
2 teaspoons Pumpkin Pie Spice
1/2 cup Pumpkin
1/2 cup Sugar
2 teaspoons Pure Vanilla

Maple Whipped Cream:
2 1/2 cups Heavy Whipping Cream
1 teaspoon Pure Vanilla
1-2 Tablespoons Real Maple Syrup

Directions:

1. In a 9x13 pan lay out a layer lady fingers. Brush the lady fingers with the real maple syrup. Flip the lady fingers to brush both sides. Do not oversaturate the lady fingers, you don't want them too soggy.
2. In the bowl of a stand mixer combine the cream cheese and sour cream, mix until smooth. Add remaining filling ingredients. Continue to mix until combined.
3. In the bowl of a stand mixer with the whisk attachment, whip the heavy cream until peaks form. Add the vanilla and real maple syrup and whisk until almost stiff peaks form.
4. Assembly: In each cup start with a layer of pumpkin filling. Next, break a lady finger into 3 pieces. Put 2 pieces on the pumpkin filling. Cover with a layer of whipped cream. Add another layer, this one thin, of the pumpkin filling. Next place last piece of lady finger. Pipe a layer of whipped cream on top. Sprinkle with cinnamon. Repeat until all cups are filled.
