No Bake Cheesecake with Fresh Strawberries


What a way to kick off the warm weather (We finally have some here in Indiana) than with fresh Strawberries and a simple No Bake Cheesecake!

This recipe comes from a little craving for sweets that I had the other day. I have recently moved and I'm still really trying to get myself to fall back into some routine and get things organized. So, I wanted to make something that was simple but delicious. I was really loving the idea of a cheesecake but didn't want to go through the hassle of making a real one, even though it's completely worth it. 

The recipe comes from allrecipes.com with a few minor adjustments. I kind of cheated and used the pre-made mini pie crust. I made a very simple strawberry sauce to put over the top. Trust me these are incredibly easy to make and so much better than that box no bake cheesecake. Anyone can whip these little sweet treats up in no time. 

To make the Strawberry Glaze all you need to do is chop the amount of strawberries you think you will need, put them in a saucepan with a few teaspoon of sugar and cook, covered and stirring occasionally, until the strawberries are soft. Let the mixture cool and then blend until smooth. Cool completely.

Ingredients:

  • 8 oz cream cheese, room temperature
  • 1 1/2 cups heavy whipping cream
  • 1/3 cup sugar, heaping
  • 2 teaspoons lime juice

Directions:

  1. In the bowl of a mixer beat the heavy whipping cream and slowly add the sugar. Beat until peaks form. 
  2. In a separate bowl beat the cream cheese until soft, mix in lime juice.
  3. Fold the whipped cream into the cream cheese, make sure to fold and not mix!
  4. Place, in a covered bowl, in the refrigerator for a few hours or overnight.
  5. When ready to serve spoon (I used and ice cream scoop) into prepared crust. Add topping of your choice and ENJOY!
